My husband, Daniel, grew up in the Eastern Townships in Quebec, and the family farm he was raised on has been producing organic maple syrup and organic beef for over forty years. I met my husband when he was visiting Vancouver Island in 2007. We married, started a family, and we have since returned to Quebec so we can continue running the farm alongside his parents.
Until recently, all of the farms syrup was sold to the Federation of Maple Syrup Producers. But for the farm to now support two families, we needed to come up with a plan to create more income. We decided to build our own brand of maple syrup and put it in to beautiful packaging, making it as much as a gift as a grocery item.
We’re still in the learning stages of our business, but the response from our supporters has been encouragement enough to keep us moving forward.
Why are we one of a kind? First and foremost, we are certified organic (yes, there is a difference)! Organic certification guarantees good, clean practices from sapling to syrup. To us, this reflects our ecological and social values, and it also speaks to our love and respect for the forests where we live. To learn more about the difference between organic and non-organic maple syrup, visit our website at www.coswebb.ca/geek.
Secondly, we ony bottle what we feel is our very best maple syrup. Every syrup farmer will produce amazing maple syrup, and not so good maple syrup. It all depends on the temperatures outside in the spring, and the time of the year. We are only bottling our beginning to mid-season syrup, completely unblended with any late season syrup which can often have an acrid quality due to the higher level of bacteria in the sap. Our syrup is delicate and delicious, and holds the perfect amount of maple flavour that you would expect in Canada's traditional sweetener.
Certified organic maple syrup.
