Scotch Mountain Shortbread Ltd.

JoAnn Catania Kinkartz

Meaford, Ontario, Canada

Since winning first prize in a shortbread competition at the Halton Agricultural Fair in 2007, I have been known as the "shortbread lady". Having gone through a painful divorce after being a stay-at-home mom for 22 years, and being unsuccessful in collecting my court-ordered child support, I needed to find a way to pay for my three children's post-secondary education, including putting my youngest through medical school. Winning the award gave me the courage to start my own business, doing what I loved best--baking! My bakery is situated in Meaford, Ontario, on the Niagara Escarpment overlooking Georgian Bay, in an area locally known as Scotch Mountain, first populated by Scottish settlers over 160 years ago. Hence, it seemed appropriate that I should call my shortbread Scotch Mountain Shortbread.

My shortbread is prepared and baked according to a traditional Scottish recipe that is almost 200 years old, and uses very simple ingredients: Wheat flour, sugar, fresh local butter and a pinch of salt. Many of my customers say it is the just like their grandmother's shortbread.

It is hand-kneaded and hand-formed which gives it its unique crisp, yet melt-in-your-mouth texture. My classic shortbread is shaped into traditional scored disks or rounds. It is baked at a low temperature for a long period of time, which gives it a shelf life of three months or longer, and makes it an excellent candidate for the freezer. Also available are smaller cookies and wafer-thin tea shortbread, perfect for pinky finger teas. Over the years, I have expanded my shortbread selection, adding various flavours, including my new savoury cocktail shortbread.

Why We’re One of a Kind

"Not since I was a little girl and my mother made it, have I had shortbread so good!". So wrote Anne Kneeshaw of Kitchener, Ontario after receiving her order of shortbread. Over and over, we hear the same comments from purchasers..."just like my mother's"..."just like my grandmother's"..."the taste takes me back" By using the freshest possible ingredients, and hand-making our artisan shortbread, we achieve a unique texture and flavour, which makes it one of a kind.

Primary Materials

We use simple, natural ingredients to make our shortbread--the freshest butter, a blend of wheat flours, sugar and a pinch of salt. To our classic shortbread, we add a variety of dried fruit, chocolate, spices and essences to come up with shortbread flavours that are surprising and delicious!
